Ingredients:
- 1 1/4 cup whole wheat flour (or whatever flour you prefer)
- 1 1/4 cup oats
- about 1/4 - 1/2 cup ground flaxseed (I never actually measure)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/8 tsp salt
- 1/2 - 1 tsp cinnamon depending on taste
- 1 cup unsweetened applesauce
- 1/2 cup yogurt*
- 1/2 cup firmly packed brown sugar
- 2 tbsp oil (I prefer coconut for the health benefits)
- 1-2 tbsp honey
- 1 large egg
- 1 cup blueberries (fresh or frozen)
* I use Vanilla Greek yogurt because we always have that on hand, my son likes it as a snack with fresh fruit mixed in. Plain Greek or normal yogurt will work as well. If you don't have yogurt, you can substitute buttermilk, which I have done to great effect. If you don't have buttermilk, you can make it by mixing 1/2 tbsp lemon juice into 1/2 cup milk and let it sit for about 10 minutes.
Directions:
1. Preheat oven to 375 degrees F
2. Line a 12 cup muffin tin with cupcake/muffin liners, or spray your tin with non stick cooking spray, which is what I do.
3. In a large bowl, combine all your dry ingredients except the sugar: flour, oats, flaxseed, baking powder and soda, salt and cinnamon, Wisk together until all combined.
4. In a separate medium bowl, mix together wet ingredients and brown sugar: applesauce, yogurt, sugar, honey, oil and egg.
5. Make a well in the dry ingredients and pour in the wet, stirring until just combined. Make sure you don't have any pockets of dry oats.
6. Carefully fold in the blueberries.
7. Spoon the batter into the muffin tin, Try not to overfill.
8. Bake for 16-18 minutes, or until a toothpick inserted in to the center of the muffins come out clean. Be sure to check more than one muffin! Let them cool on a cooling rack for a few minutes.
9. If you decide to freeze some, be sure to let them cool completely before putting them in the freezer.
10. Enjoy!
Assemble all your ingredients.
In a large bowl, mix together all your dry ingredients.
In a medium bowl, mix together your wet ingredients and brown sugar.
Wisk until combined,
Pour applesauce mixture into your dry ingredients.
Stir until just combined,
Carefully fold in your blueberries.
Try to make sure they are evenly distributed.
Fill your muffin tin, then pop them in the oven!
Make sure a toothpick comes out clean when inserted in to the middle
Let them cool on a cooling rack
Enjoy!
